Norwegian Pancakes

6 to 8 eggs
6 to 8 heaping tablespoons flour 1 teaspoon salt 2 tablespoons sugar 1/3 cup melted butter milk (or yogurt or buttermilk) to proper consistency Beat eggs, add salt, sugar and butter. Then add flour and milk alternately until you have a thin batter (consistency of heavy cream) and enough batter to satisfy your crowd. Heat a flat pan which has been lightly coated with butter. Pour a small amount of batter onto pan and roll it around until it fills the pan. Flip on the other side and serve with syrup, fruit or sugar and lemon juice. |
