Ginger Bread Spice Cake

    1 package spice cake mix
    1 (3.9 oz) package instant vanilla pudding mix
    1 tsp. cinnamon
    1 tsp. ginger
    1 C black strap molasses
    1 C milk
    1/2 C canola oil
    1/2 C water
    4 eggs
    1 cup mixture of dried cranberries, raisins and currants

    Frosting:

    1 jar lemon curd
    2 cups whipped cream

    Directions

    Preheat oven to 350 degrees. Grease and flour cake pans

    In a large bowl, combine cake mix, pudding mix, molasses, milk, oil, water and eggs. Beat for 4 minutes, then mix in dried fruit.

    Pour batter into prepared pans, Bake in the preheated oven for 40 to 50 minutes, or until a toothpick inserted into the center of the cake comes out clean. Set on a wire rack until cooled.

    Layer with cranberry jelly and lemon curd/whipped cream.
